Nonstick cookware carries more anxiety than almost anything else in a kitchen, and the anxiety is mostly attached to a compound that has not been in the manufacturing process for over a decade. It is worth separating what was true, what is true, and what actually matters day to day.
What PFOA was, and why it is not the issue now
Most nonstick coatings are PTFE — polytetrafluoroethylene, sold under brand names including Teflon. PTFE itself is inert; it is one of the least reactive substances used in a kitchen, which is precisely why food does not stick to it.
The health concern was never really about PTFE. It was about PFOA, a processing aid used to manufacture it, which persists in the environment and in human blood and was associated with health effects at occupational exposure levels. PFOA was phased out of cookware manufacturing by around 2013 under a US EPA programme, and cookware sold since is made without it.
The risk that is real: overheating
PTFE begins to break down at around 260C, and at higher temperatures it releases fumes that cause flu-like symptoms in humans and are acutely fatal to pet birds, whose respiratory systems are far more sensitive.
Nothing you cook gets there. Searing steak is around 215C; a simmer is 100C. The one way to reach 260C in a domestic kitchen is to put an empty nonstick pan on a high burner and walk away — which takes about three minutes.

- Add oil or food before the pan goes on the heat, not after it is hot.
- Use medium heat. Nonstick is not a searing pan and never was.
- Ventilate — the extractor exists for this.
- If you keep birds, do not use PTFE cookware at all. That is the one unambiguous recommendation.
What about a scratched pan?
Swallowing a flake of PTFE is not a poisoning event — it is inert and passes through. The real problem with a scratched pan is more mundane: once the coating is broken it stops working, food sticks and burns in exactly the damaged spots, and the flaking accelerates.
So the answer to "is it dangerous" is largely no, and the answer to "should I keep using it" is also no, for reasons of cooking rather than health.
Ceramic: a different trade, not a safer one
Ceramic nonstick is a silica-based sol-gel coating with no fluoropolymers, which makes it attractive to anyone uneasy about PTFE. It tolerates higher temperatures, which is a genuine advantage.

The trade-off is durability. Ceramic coatings lose their release properties noticeably faster — often within a year or two — while still looking fine. If you buy ceramic, buy it knowing you are choosing shorter life for higher heat tolerance rather than buying a safety upgrade.
How long a pan should last, and how to get there

Two habits do most of the damage: preheating empty, and the dishwasher. A third, less obvious one is aerosol cooking spray — the propellants and emulsifiers polymerise onto the surface as a varnish that is nearly impossible to remove and that makes the pan behave as though the coating has failed.

Use it for what it is good at
Most nonstick pans die early because they are asked to do everything. They are excellent at two things — eggs and delicate fish — and mediocre-to-harmful at the rest, because searing and pan sauces both want temperatures and surfaces nonstick should not provide.
