The headline number people want is a single figure, and there isn't one — vacuum sealing extends different foods by wildly different amounts, and it does far more in a freezer than in a fridge. Understanding why makes the storage times obvious rather than something to memorise.
What it actually does
Removing air from a bag addresses two separate problems. Oxidation — the process that turns fat rancid and browns cut surfaces — needs oxygen, so removing it slows the food's chemical decline. Freezer burn is dehydration: water sublimating out of the food into the air pocket in the bag and refreezing as ice crystals on the surface. No air pocket, essentially no freezer burn.
It does not stop bacteria. Most food-borne bacteria are slowed by the absence of oxygen, but some thrive without it, which is why the never-seal list below is a safety matter rather than a quality one.

Is it worth owning one?
The machine is a one-off cost of roughly $40 to $80. The bags are the real expense: 15 to 30 cents each pre-cut, or 10 to 18 cents if you buy a roll and cut your own.

So the question is whether you prevent more than about a dollar of waste a week. If you buy chicken in family packs and portion it, or freeze half of everything you batch cook, that is easy. What never to vacuum seal
- Raw garlic and onion, especially in oil — botulism risk.
- Fresh mushrooms — they need airflow and go slimy quickly.
- Soft and fresh cheeses — the pressure crushes them and they support anaerobic growth.
- Raw brassicas (broccoli, cabbage, sprouts) — they release gas and inflate the bag. Blanch them first.

Liquids, and the technique that fixes them
This is the most common frustration: soup or marinade gets pulled straight into the machine. The fix is to freeze it first. Pour the liquid into a container or a bag laid flat on a tray, freeze until solid, then seal the frozen block. Two extra hours, no mess.
For smaller amounts, most sealers have a pulse or manual button that lets you stop the vacuum the moment liquid starts to move. And a jar attachment seals liquids in a mason jar without the bag problem at all.
