Grind size is the single largest lever you have over how a cup tastes, and it is the one most home setups never touch. The reason it matters so much is that grind size controls how fast water can pull compounds out of the coffee — and every brew method gives the water a different amount of time to do it.
Match the two and the coffee is balanced. Mismatch them and no amount of adjusting the beans, the water or the machine will fix it.
Why contact time decides the grind
A blade grinder is a small propeller in a chamber. It chops whatever it hits, repeatedly, until you release the button. Particles near the blade get hit many times and become dust; particles at the edge get hit rarely and stay as chunks. Every batch contains both.
A burr grinder passes beans between two abrasive surfaces held a set distance apart. A bean cannot exit until it is small enough to fit through that gap, and it stops being ground once it does. Change the gap and you change the grind size, repeatably.

Why consistency changes the taste
Water pulls compounds out of coffee in a sequence. Acids and fruity notes come out first, sugars and body next, and bitter, astringent compounds last. Extraction has to stop in the middle of that sequence.
A small particle reaches the bitter stage quickly. A large one is still at the sour stage when the brew finishes. With a mixed grind, both happen in the same cup — and you cannot fix it by adjusting time, because whichever direction you go makes one fault worse.
Where it matters, and where it does not
Contact time is the variable that decides how much consistency matters. Espresso extracts in about 25 seconds, so a particle that is twice the size of its neighbour never catches up. Cold brew steeps for 12 to 18 hours, by which point almost everything has fully extracted regardless.

So the honest advice is conditional. If you drink cold brew and French press, a blade grinder is a reasonable tool and the money is better spent on beans. If you make pour-over or espresso, a burr grinder will change your coffee more than a better machine will.

Getting the best out of a blade grinder
If you already own one, three habits narrow the gap noticeably without spending anything.

Pulse, do not hold
Short bursts of two or three seconds. Holding the button down grinds the middle to dust while the edges stay whole, and the friction heats the grounds enough to drive off aromatics.

Shake between pulses
Lift the grinder and shake it sideways between bursts. That moves the uncut pieces into the blade path and is the single most effective thing you can do.

Grind less at a time
A half-full chamber grinds far more evenly than a full one. Two small batches beat one large one.
Reading your cup and adjusting
Once you have a burr grinder, the setting becomes your main lever. The feedback loop is simple and worth memorising: bitter and harsh means go coarser; sour and thin means go finer.

Conical or flat burrs?
This is the next question people ask, and it matters much less than the first. At domestic prices, conical burrs are the norm because they are cheaper to manufacture; flat burrs appear in commercial machines and enthusiast grinders.

The difference in the cup at the same price point is small. A well-made conical grinder beats a poorly made flat one comfortably, so buy on build quality and burr size rather than on geometry.
